Simon, a chef with an impressive pedigree, honed his skills under the tutelage of the renowned Roux brothers at the three-Michelin-starred Waterside Inn in Bray and then at two-Michelin-starred Lettonie in Bristol. His passion for unashamedly classical French techniques is the backbone of the menus, which highlight the absolute best local ingredients, many of which are home-grown in their own gardens or supplied by Kate’s father from his well-known local nursery.
The culinary journey at 1861 is exceptional. Look out for the Roast loin of Venison with elderberry and juniper sauce. Desserts like hot raspberry souffle with chocolate ice cream keep us coming back.
